CHUNKY GUACAMOLE
I love avocados and this recipe is great alongside the Chicken Quesadillas, or on its own with a stack of tortilla chips when your mates come over. It’s so easy to make you’ll never bother buying it from the shop again!
SERVES 6 – 8
Ingredients
1 large ripe tomato
3 ripe avocados
1 garlic clove
handful of coriander (cilantro) sprigs
½ lime
2 pinches of chilli powder
¼ teaspoon salt
4 twists of black pepper
drizzle of olive oil
1 Firstly, using a knife and being careful, chop your tomato into little chunks, then tip them into a medium bowl.
2 Scoop out your avocados straight into the bowl with the tomato. Mash them together with a fork.
3 Peel and crush the garlic and finely chop the coriander, saving a few whole leaves to serve.
4 Squeeze the lime juice into the avocados, and add the garlic, coriander, chilli powder, salt and pepper. Give it a good mix with the fork and taste it to check you’re happy.
5 Spoon your guacamole into a serving bowl, drizzle with some olive oil and sprinkle with the reserved coriander leaves.
TIP: If you’re not serving straight away, save one of the avocado stones and pop it in the guacamole, as it helps stop it from going brown. Cover with clingfilm and pop it in the refrigerator until you’re ready to eat.
